This lemon chicken orzo recipe makes a wonderful quick light lunch. It is a super easy meal to cook on a Trangia Stove or in a Billy Can over a campfire.
Feel free to experiment with different vegetables, herbs and quantities of lemon juice. It’s a very forgiving and adaptable recipe.
Lemon Chicken Orzo
- 1 tsp olive oil
- 2 chicken breast (diced)
- 4 handfuls orzo pasta
- 1 clove garlic
- 1 red pepper
- 1 tsp mixed herbs
- ½ lemon (juice only)
- 1-2 tsp butter
- Lightly fry the chicken in olive oil in a pan.1 tsp olive oil, 2 chicken breast
- Add the orzo and water to the pan. Bring to the boil then simmer for 5 mins.4 handfuls orzo pasta, 1 clove garlic
- Add the pepper, garlic, herbs, butter and lemon juice.1 clove garlic, 1 red pepper, 1 tsp mixed herbs, ½ lemon, 1-2 tsp butter
- Keep simmering until the orzo is cooked and the water has nearly evaporated.
